A bit about myself- I was born into a West Indian household where food was not only a necessity, it was a culinary affair. I grew up eating foods spiced up and cooked in many different ways. When I decided after college to switch to a plant based diet, it was like the planets had realigned to those close to me!
In 2020, I was diagnosed with Rheumatoid arthritis, Psoriatic arthritis, Fibromyalgia, ISLD, and Lupus. Living with an autoimmune disease can be a daily challenge. The constant pain, fatigue, and other symptoms can make it difficult to lead a normal life. But for me, being vegan has been a game-changer in managing my condition.
Before I transitioned to a plant-based diet, I struggled to find foods that didn't trigger my symptoms. I would experience flare-ups that left me feeling drained and in pain.
Today, I'm grateful for the way that being vegan has helped me manage my autoimmune diseases. It's not a cure, but it's a powerful tool that's made a significant difference in my quality of life.
